"Um Ali" dessert is one of the most popular Arabic sweets.
It is very fragrant and consistent, not absent from special occasions and from the restaurants of 5-star hotels in the Arab world.
It is basically a bread pudding that can be prepared from bread, croissants, pie dough or French dough.
It is a dessert specific to Egypt.
There are several legends about the origin of this dessert.
During the Ottoman occupation, the sultan who hunted in the Nile delta had a craving for dessert.
He stopped in a small village. There, in order to please the sultan, the villagers asked the most famous cook to prepare something special.
She made a dessert out of what she had in the house: a little dry bread soaked in milk with coconut sugar, pistachios, almonds.
It is said that the sultan liked this dessert so much that on his next visit to the village he asked to be served with "Um Ali".
Another legend says that Um Ali was the first wife of Sultan Ezz El Din Aybek.
After the sultan's death, she hatched a plot to kill the sultan's second wife, and in honor of her success she would make this dessert and distribute it to her subjects.
For the friends on the site who complained that Arabic food is very laborious, here is a very simple and flavorful recipe.

  • 8 slices of toast
  • 3 glasses of milk
  • 1 glass of sugar
  • 1 glass of sour cream (Arabic: “ghemar”)
  • 1/2 cup raisins
  • 1/2 cup coconut flakes
  • 1/4 cup crushed almonds
  • 1/2 cup crushed pistachios
  • 2 tablespoons rose water
  • 2 tablespoons orange blossom water
  • 4 tablespoons ground cinnamon
  • a heat-resistant vessel 25/35 cm

Servings: 8

Preparation time: less than 60 minutes


The bread is broken into pieces of about 3-4 cm and placed in the heat-resistant dish.

Sprinkle with raisins, coconut flakes, medals, pistachios, sugar (keep 3 tablespoons of sour cream) and scotch.

The milk is boiled and when it boils, remove from the heat and add rose water and orange blossom water.

Pour over the bread.

Rub the cream well with 3 tablespoons of sugar and spread evenly over the bread with milk.

Sprinkle with cinnamon and put in the preheated oven at 180 degrees for about 20 minutes or until browned.

It is decorated to taste and imaginative.
