When the rice boiled, we drag it after the fire, we add the lemon peel and the almonds (if we have it), I didn't have it and I didn't put it. Then add the yolks and mix well, at the end the egg whites and with slow movements we mix them.

Grease a cake tin with a detachable ring -18 cm in diameter- pour the pudding composition and put it in the preheated oven, over medium heat, until it browns and passes the toothpick test. When it's ready, we take the form out of the oven, let it cool as much as possible, I didn't have the patience because I like things like this to eat hot. We take out the ring of the form, we cut and we put it on the plate, I sprinkled cinnamon, but it can also be served with any kind of jam. I can say that it went to my heart so good it was, but you don't have to believe me ...

PS. In the original recipe they put only 6 tablespoons of sugar and these in yolks, I made it to my taste, that is sweeter ...
