In any case, they will dry out. For both methods, there is a risk of overcooking the potato, making it harder to cut it into pieces (if you use a microwave, you should not cut the potatoes in advance) because you risk it will crumble.


Crispy potatoes

I took this recipe from Jamie Oliver. It can be adapted to other vegetables such as carrots or parsnips.

The preparation for crispy potatoes is similar to those with rosemary (recipe here). Boil the potatoes first and then put them in the oven together with the garlic, olive oil and spices. They are an excellent garnish for steaks or can only be served with a salad.

Peel the potatoes, leave them whole and boil them, adding 1 teaspoon of salt, in a pot on the stove for 15 minutes.

When they are cooked, drain the water in a sieve in the sink and leave them for a few minutes. Preheat the oven to 180 degrees (medium).

In a large pan put olive oil, salt and spices (sage, rosemary, pepper). Turn the potatoes in the pan and cover with oil until covered.

Bake for 40 minutes, then remove the pan, turn the potatoes on the other side. Using a spatula, flatten the potatoes a little. Then add the butter, the pieces, among them. Bake again for 20 minutes.
